Nectarine-Lime Oatmeal

Last week, I found myself in possession of a ginormous, juicy nectarine. I always thought I didn't like them (because they were like an inferior version of peaches), but this one proved me wrong. I mean, they essentially taste the same, but peaches don the fuzzy skin. Other than that, they're nearly twins!


So what would I do with the nectarine? Obviously, my first thought was to use it in oatmeal. I did some hardcore research and studied all sorts of flavor combinations. I saw a few sources listing nectarine/peaches and lime as a good combination, so I thought I'd try it out.


Now, I'll be honest, I'm a much bigger proponent of peaches with cinnamon and other earthy flavors. However, I thought it was pretty tasty and surprisingly refreshing, and it's clearly a combo that many people enjoy! Try it out and let me know what you think!

Nectarine-Lime Oatmeal

Cook Time: 5 min
Ingredients (serves 1)
  • 1 cup milk of choice, or water
  • 1/2 cup rolled oats (I use Country Choice Organic)
  • 1 nectarine (or peach), diced
  • juice of one lime (~2 tbsp)
  • pinch of salt
Instructions
  1. Bring milk (I use an equal mixture of almond milk and water) to a boil, add oats, and reduce heat to medium. (If you'd like to add flax or chia seeds, do so now.)
  2. Add diced nectarine!
  3. Once more of the liquid has absorbed, add lime juice and salt. Stir.
  4. When you're pleased with the consistency of the oatmeal, transfer to a bowl. Serve with another splash of your milk of choice and any other additional toppings (shredded coconut, nuts, etc.). I used shredded coconut!

  1. Hi Lauren! I recently discovered your blog (thanks to my oatmeal addiction :D) and love it! I've been using your recipes for my breakfast this past week and loved every minute! Anyway, i have one question : how long do you usually leave your overnight oats in the fridge for? I know overnight but i mean how many hours..:) thanks again! :D

    1. Aw, that's so great! I typically will have my oats in the fridge for about 8-9 hours, but I think they're "ready" after about 4-5.

  2. You have one recipe using PB2. I would love more recipes using with that since I have like 5 jars, and I love it in oatmeal. I never really make it into "peanut butter", but I love how creamy and delicious the oatmeal gets. So if you could do more recipes using that it would be lovely! :)x

    1. That would require me to buy another expensive jar! I'll consider it. However, know that you can always take any of my PB recipes and use PB2 instead, by mixing it into the liquid while you're bringing it to a boil.
