Apple and Veggie Sausage Oatmeal

I definitely try to limit my exposure to fake meats, but it's always fun to experiment with them. My friends know that soyrizo is my absolute favorite, and good ol' tempeh is a close second. I tend to have those around in my kitchen pretty regularly.


However, occasionally I get super crazy and buy random items...like these sausage links.


To be honest, the only purpose for these links was this oatmeal recipe. I was browsing Whole Foods' ever-growing veg*n selection and saw these little babies, and I immediately knew I wanted to use them in a porridge recipe. Ba-da-bing, ba-da-boom.


The sausage links truly impressed me. The texture and flavor both came quite close to the real deal. I won't say that I'll be buying them regularly, but they offered a new experience that I enjoyed.


This was delicious. The flavors worked together just as I'd hoped they would. Before I chose to be plant-based, I used to dip my bacon in maple syrup. I loved the combination of salty and sweet. This porridge offers a similar effect, but with the added bonus of nutritious apple and hearty oats. Certainly, the veggie sausage links are heavily processed and not particularly healthful, but they were a tasty treat!

Note: The following recipe makes two servings to avoid only using half an apple. :)

Apple & Veggie Sausage Oatmeal

Ingredients (serves 2)
  • 2 breakfast sausage links (I used Tofurky)
  • 1 cup milk of choice
  • 1/2 cup water
  • 1/2 cup quick cook steel-cut oats (I use Country Choice Organic)
  • 1 apple
  • 1/2 tsp vanilla extract
  • 1/4 tsp cinnaon
  • 2 tsp maple syrup
  • pinch of salt
Instructions
  1. Cook sausage link according to directions.
  2. Bring milk (I use 1 c almond milk and 1/2 c water) to a boil, add oats, and reduce heat to medium. (If you'd like to add a teaspoon of flax or chia seeds, do so now.)
  3. Dice apple into small pieces and add immediately to the saucepan.
  4. Once more of the liquid has absorbed, add vanilla extract, cinnamon, maple syrup, and salt. Stir.
  5. Cut sausage link diagonally into 1/2-inch slices and stir into oatmeal (you could also save some for a topping).
  6. When you're pleased with the consistency of the oatmeal, transfer to a bowl. Add a splash of your milk of choice and any other additional toppings (more maple syrup, nuts, etc.).
