Another lazy blog week. And I promised myself I'd be better in December! The sad thing is, I actually had recipes I could have posted. In my defense, they were terrible pictures that I wasn't desperate enough to publish. Seriously. You try taking good photographs at 5:30 am.
This is one of those refrigerator recipes that will actually be perfectly satisfying cold. I rarely eat my oatmeal cold, but this one is an exception. (To be honest, though, I still heated this one up a little bit!)
This will obviously not be as sweet as your standard cookie dough recipe. You could always sweeten it with honey or maple syrup. I only used two dates, and I found that to be sufficient.

Cookie Dough Overnight Oatmeal

Cook Time: Overnight
Ingredients (serves 1)
- 1/2 cup rolled oats (I use Country Choice Organic)
- 1/2 cup milk of choice
- 2 pitted dates, chopped finely
- 1 tsp chia seeds
- 1/4 tsp vanilla extract
- 1/8 tsp molasses
- 1/8 tsp cinnamon (optional)
- handful of chocolate chips
- pinch of salt
Instructions
- Combine all ingredients in a mason jar.
- Cover with lid and shake, shake, shake until combined.
- Store in the refrigerator overnight (or for several hours). Eat cold or warm up in the microwave!

Variation
Oatmeal Raisin Cookie: Swap the chocolate chips for raisins, and increase the amount of cinnamon to 1/4 tsp.

ReplyDeleteI believe so, yes. Flax has more of a flavor, though, so it might change the flavor a bit. I, however, love the taste of flax, so I wouldn't mind the change. :)
DeleteI just made this as my first ever overnight oats! Although it wasn't actually overnight...I made it at 4 and ate it around 8 because I couldn't wait :) so maybe I'll just call it refrigerator oats! Delicious, and it really does taste like cookie dough. Thanks so much for the recipe- and all of them!

ReplyDeleteEither maple syrup or brown sugar. Brown sugar will lend a more authentic chocolate chip cookie taste, but it depends on your views on refined sugars vs. "natural sweeteners" (i.e. maple syrup).
DeleteAnd that's really strange. Molasses is a very standard ingredient.. I usually find it in the baking aisle, or even by the breakfast items next to the maple syrup.

ReplyDeleteI absolutely love your blog! I am a major oatmeal fan, and love it as a pre-dance snack! I'm currently working before I go back to University and found that cooking oats took too long in the morning (I never got up early enough and would have been late for work...:)). When I saw your overnight oats, I knew I just had to make it! I've tried a couple of your stove stop recipes (all the peanut butter ones being the absolute best, way to go!!) and have also fallen in love with tea steeped oatmeal ('ve played with it a little though and now use earl grey tea and cashew nut butter, you should try it :) it's deeeeelish! ) and wanted to try the cookie dough recipe for today, and wanted to mention, the recipe as is, is amazing!..but I have found some good add-ins that I think you could enjoy as well..Based on a recipe for almond butter oatmeal cookies (the cooking actress..) I thought I could add almond butter in to increase creamyness and boost protein, and added a bit of quark as well. The result: tasty :) (I'm going to be posting the recipe on my (new!) blog in case you are interested :) hope you like it and thank you for all the amazing recipes!

DeleteGlad you like it! Yes I can totally understand..nut butter is just so versatile, I can find an excuse to add it in to any meal of the day (my favourite being by the spoonful while watching something funny on Netflix :) )

When I make oatmeal, I boil it on the stove and add applesauce and cinnamon. That's all I know. I want to try this, but I have a dumb question. Do I need to boil the oats before I put them in the jar?
ReplyDeleteNope! They literally soften up simply from absorbing the liquid you put in the jar. It's kind of amazing. I believe you only need to boil the oats first if you're using steel-cut oats, but I've never done this.

DeleteI love this recipe! Sometimes I use raisins instead of dates or just leave them out totally since I am not a huge fan of them and I don't use molasses because my hostmum doesn't buy it. It still is sweet enough for me and if needed I just add a bit of brown sugar... One of my favourite recepies!
