PB&J & Apple Oatmeal

I have another oatmeal recipe for you. It's basically the combination of several of my favorite oatmeal recipes. I woke up Monday morning craving peanut butter, but I needed to use up half an apple I had in the fridge, so I just kind of threw it all together. Naturally, it was delightful (I think I've made less than three "bad" bowls of oatmeal in my life. It's hard to screw up!).




PB&J and Apple Oatmeal

Cook Time: 5 min
Ingredients (serves 1)
  • 1 cup milk of choice, or water
  • 1/2 cup rolled oats (I use Country Choice Organic)
  • 1 apple
  • 1/2 tsp vanilla extract
  • 1/4 tsp cinnamon
  • pinch of salt
  • 1 tbsp nut butter
  • your favorite jam or fruit butter/preserves
Instructions
  1. Bring milk (I use an equal mixture of almond milk and water) to a boil, add oats, and reduce heat to medium.
  2. Immediately dice in the apple to the cooking oats. You want to add this as soon as possible so the apple has a chance to soften up in the cooking process.
  3. Once more of the liquid has absorbed, add a pinch of salt, vanilla extract, and cinnamon.
  4. If you'd like to add any additional ingredients (coconut oil, raisins, sunflower seeds), do so now.
  5. When you're pleased with the consistency of the oatmeal, transfer to a bowl. Top with swirls of grape or strawberry jam/jelly/preserves and globs of your favorite nut butter. I used banana butter. Add a splash of your milk of choice and enjoy!

  1. I made kiwi oatmeal today and thought of you! And it came out alright, though not as good as other creations (pretty much all yours) that I've tried.

    1. Kiwi! How fun. I bought those for the FIRST time a couple weeks ago. I had always hated them (for some unknown reason), but they are SO DELICIOUS. I considered putting them in my oatmeal, but it never happened. :)

  2. I know this is an old post, but I tried this today and it was DELICIOUS!!! I devoured it in record time :) I used unsweetened almond milk and strawberry jam. Thanks for posting the link to the banana butter btw, I made some of that and used it for this too. Yum!! I have IBS as well, so being able to enjoy peanut butter without having to worry about the oil content quite so much is awesome. Cheers!!

  3. Hey Lauren, May I ask, what is "banana butter"? Also, is it possible to "bake" the oatmeal using a microwave, whilst following the same recipe? I don't have an oven.
    By the way, would you considering coming up with oat recipes for lunch / dinner in the future? Just a suggestion :)

    1. Banana butter is peanut butter blended with bananas, as made popular by Chocolate Covered Katie. It is popular to bake oatmeal in the oven. I have seen many readers do this on Instagram, but I'm personally not familiar with the method. I'm sure a quick Google search could help you out!

      I have ideas for savory oatmeal recipes; I just rarely make them. :P They'll pop up every now and then--I promise!

    2. Aw, thanks! I'll check out the banana butter recipe, sounds yummy! I started grinding my own nut butters too. I find it useful as one can adjust the crunchiness and consistency of it, and...no added palm oil/salt/sugar!
