Spiced Brownie Baked Oatmeal

It may look like a calm, traditional brownie (or at least the baked oatmeal version of one), but this brownie is feisty. He's maybe even a little vicious.


Of course, you have control over his viciousness. You could just give him a little bit of bite. OR you could be like me and drop three generous pinches of cayenne pepper into the batter. It's up to you.

Nutty Pumpkin Berry Oatmeal, + Other Hacks for Banana Haters

Dear Banana Haters,

This post is for you. Although it may seem like we play for opposite teams (I'm all like, "BRING ON THE 'NANAS," and you're all, "UGH, I GAG!"), we're not all that different.

You see, as much as I love (and NEED) my daily banana(s), I also know what it's like to loathe an ingredient. Even before my transition to a herbivore lifestyle, I have never appreciated the taste of sour cream. I think it's pretty vile, in fact. If my favorite blog kept making oatmeal topped with sour cream, I would be pretty ticked.

Therefore, I have a solution. You have probably noticed by now that most of my favorite recipes contain banana. Not wanting you to miss out, I have compiled a list of hacks for all you banana haters...including one new recipe (pictured below--scroll to the bottom of this post for the recipe)!

Coconut Sweet Potato Oatmeal

Taking a tip from my Coconut Kiwi Oatmeal, I decided to go for another round of coconut butter. This time, I paired it with sweet potato.


If you haven't noticed, I'm a major fan of sweet potato in oatmeal. I might even like it more than pumpkin. The only reason I don't use it more often is because...well...I'm lazy. Sweet potatoes need to be cooked, and that's annoying. It's always worth it, though.

Sweet Potato Fudge Oatmeal

If you like Brownie Batter Oatmeal (and it appears that most of you do), then you will love this. Bonus: NO BANANA. To me, that's a downer, but to some of you, it will seal the deal.


Now let's be real. Have I ever steered you wrong with any recipe that contained the word "fudge"? Let's look at the evidence: Raspberry Fudge Oatmeal. Fudgy Banana and Peanut Butter Oatmeal. Ummm, CASE CLOSED.

Maple Sweet Potato Oatmeal

I think I've overcome my dislike of maple syrup. I've recently realized that it was never maple syrup itself that I loathed, but instead the general experience of eating the classic American pancake breakfast (aka Bisquik). I hate the taste of premixed white flour pancakes, and combined with sweet syrup, I was destined for a post-breakfast bellyache. It's no wonder I associate pancakes and syrup with misery.


On the other hand, maple syrup and oatmeal has become one of my most beloved ways to start my mornings. Not only does it sweeten an earthy porridge, but it adds an unmatchable flavor that I've truly come to appreciate...maybe a little too much. :)

Sweet Potato Gingerbread Oatmeal

Sweet potatoes are so dreamy. They can be silky and creamy, or fried and crunchy. They can be salty and packed with herbs, or sweet and packed with spices. I do love me some sweet potato oatmeal.


This recipe is quite different from my other gingerbread recipes, mostly because I allowed sweet potatoes to be the star. It seemed pointless to mask the sweet potato flavors completely since I already have gingerbread recipes, so I intentionally elected to make this more of a "gingerbread-spiced sweet potato" recipe (and I'm pleased with the results).

10 Oatmeal Recipes for Thanksgiving Leftovers

I know I haven't posted a new recipe since Tuesday, but I decided it was vital for me to spend this week relaxing and exploring the city with my sister, who is visiting from Minnesota. Instead of posting a new porridge today, I created a round-up of all the recipes you could make using some of your potential leftovers from Thanksgiving (which, by the way, is my FAVORITE holiday...even as a herbivore!).

I have so much to be thankful for...seemingly more so than previous years! I'm thankful to have "made it" in this city. I'm thankful to finally be a teacher. I'm thankful for plant-based options popping up more and more at restaurants around the city. I'm thankful for peanut butter on a genuine NY bagel. I'm thankful for this blog and the joy it brings me every week, as well as the love and support given to me by Country Choice Organic. I'm thankful for sauteed kale (because JEE-ZUSS it's so good). I'm thankful for warm fleece jackets, hot tea, electric blankets, and space heaters. I'm thankful for my family, friends, and everyone who reads my blog (YOU)!

Thanksgiving Stuffing Baked Oatmeal

You know I've never been much into holiday-themed recipes, but I've been alllllll about these Thanksgiving recipes lately: Pumpkin Pie, Apple & Chestnut, and all of those sweet potato recipes. I have more coming up next week, too! It's probably because Thanksgiving is my favorite holiday. Food, food, food...but no commercialism!


This obsession has grown recently due to the fact that I won't be able to enjoy much Thanksgiving food this year. As a vegetarian, I could still enjoy all my favorites: corn, squash, potatoes, stuffing, pumpkin pie, etc. Now, however, I have to accept that fact that all of these items are generally loaded in butter. Le sigh. As a result, I've turned to oatmeal to satisfy any Thanksgiving cravings (although I may actually make some herbie-friendly Thanksgiving foods on my own).

Orange and Sweet Potato Oatmeal

I hope nobody is getting impatient at my lack of baked and overnight recipes. My preference has always been for stove-top oats, so I will continue that trend most of the time. It also doesn't help that I do not have a microwave (for realz), so when I heat up my oatmeal in the morning, I just throw it on the stove to warm while I do my hair and make up. That definitely wouldn't work with a baked oatmeal!


However, I feel like I've pumped out some pretty fantastic recipes lately, so I will not apologize. This one uses just five ingredients and a pinch of salt--hurray for simplicity! As it turns, one orange is all it take to add a special brightness to a simple sweet potato porridge.

Oatmeal Recipes for Autumn Lovers

I can take a hint. When I asked for what ingredients you'd like to see more of in my recipes, the resounding opinion was simply everything autumn. I couldn't agree more, which is why I've been pumping out all sorts of hearty, autumn goodness. Summer food is delicious, but when the temperature starts dropping slightly and everyone breaks out their best pair of boots, delving into a bowl of cozy porridge is truly perfection. This is the time of year when the "seasonal porridge lovers" join us crazies who eat it year-round. For once, everyone's in agreement, and we can all share our love of hot, creamy, pumpkin-themed oatmeal. :)

Here are my favorite and/or most popular autumn-themed oatmeal recipes. Plus, since everyone lurrrrves my autumn recipes, I capped myself off at ten recipes instead of five. (And yes, there will be pumpkin.)

Apple and Sweet Potato Oatmeal

I must admit that I’ve been pining to incorporate sweet potatoes into my porridge again all summer. I somehow managed to resist until the end of August (when I made my Sweet Potato & Soyrizo Oatmeal), and here I am again, writing up another sweet potato post.


What I find especially charming about sweet potatoes is its versatility. It functions beautifully in both savory and sweet recipes. Last week, I showed how to make it savory (with the soyrizo). Now, I paired it with apple and earthy apple pie spices to bring out its dessert-like qualities.

Sweet Potato and Soyrizo Oatmeal

Let’s all take a moment to acknowledge just how fantastic soyrizo is.


For those of you who aren’t familiar with it, it’s the vegetarian version of chorizo, a Spanish sausage. My first experience with it happened at my favorite restaurant in Newark, Elbow Room. It’s a specialty mac and cheese joint, and it’s the cutest little thing. They have this ridiculous vegan queso mac, made with a housemade vegan cheese sauce (meant to replicate queso fondido), soyrizo, avocado, cilantro, and fried tortilla strips. I was allllllll about that place last year.

Savory Butternut Squash Oatmeal

It's been a while. I haven't posted a savory oats recipe for months. I've been meaning to do it for a long time, too. Every time I update my recipe index and see that one wimpy savory oats recipe, I feel a surge of motivation to give it a companion, but alas, it would never surmount to anything.

Until now!


Have you ever had butternut squash risotto? That's what this reminded me of. It was pleasantly creamy, yet savory. The oatmeal was an excellent vehicle for the butternut squash, which is truly the star of the recipe.

Sweet Potato Oatmeal Muffins

What do you do when a hurricane pummels your town and cancels school for four days? Bake. Bake all afternoon. Bake multiple batches of muffins and have your roommates taste-test for you.


Here's the result for you! These muffins are perfect for a healthy breakfast. They're sweet enough to be delicious and satisfying, but not overly sweet like traditional muffins. They are also free of refined sugars and flours. You're welcome!

Sweet Potato Pie Baked Oatmeal

Well, I got a new laptop. I hate to admit it, but there was nothing functionally wrong with my other one. In fact, it was probably the best-working piece of technology I've owned for as long as I've been old enough to actually use technology. ;)


Why the switch? Well, a 17-inch, 10-pound laptop is not functional for someone who carries her laptop everywhere on her back. Not only is it painfully heavy to lug around, but it barely fits in my backpack! Each day that I had to stuff it into my backpack, the edges and corners got a little more scuffed. Ugh! My mother and I were clearly NOT thinking when we ordered that model.

Sweet Potato and Cranberry Oatmeal

Having this job means packing lunches again. My entire first week, I stuck to two meals. The first was a PB&J sandwich. Shocking? No, not at all. :)


The second was a baked sweet potato. With Earth Balance. And cinnamon. And a little salt. And dried cranberries. GOOD GRACIOUS.
