Spiced Brownie Baked Oatmeal

It may look like a calm, traditional brownie (or at least the baked oatmeal version of one), but this brownie is feisty. He's maybe even a little vicious.

Of course, you have control over his viciousness. You could just give him a little bit of bite. OR you could be like me and drop three generous pinches of cayenne pepper into the batter. It's up to you.

5 Back-to-School Oat-tastic Solutions for Students & Teachers

Some people think students and teachers live a different world. WRONG. I became a teacher because I wanted to be a student forever, and it's the closest I could get.

Either way, both students and teachers have some early mornings and long days. And both groups are known for skipping meals--particularly breakfast!

Here are 5 solutions for enjoying your oatmeal during that dreaded morning rush!

Frosted Brownie Baked Oatmeal

You know what's fun? Eating dessert for breakfast.

I mean, I could never literally eat dessert for breakfast--at least not what most people consider dessert. Thanks to my IBS, I have the world's most sensitive stomach. Living in New York City, I enjoy a variety of vegan desserts frequently (shout-out to Wild Ginger and the PERFECTION that is their Peanut Butter Bomb Cake), but it never takes long for the pain to settle in! Thus, when I order desserts while eating out, it's often a conscious choice with a careful consideration of the consequences.

Strawberry Rhubarb Breakfast Cobbler

FINALLY I got my hands on some rhubarb. I thought the entire summer was going to slip away without me finding some. Would you believe my sister had some the entire time?

Considering how much I enjoyed my Blueberry Breakfast Cobbler, I decided to try something similar with my rhubarb. As you can see, the result was gorgeous.

Lava Baked Oatmeal [Guest Post]

Hi guys it's me, @laura__kiss, again  :) You may remember me as I was the Oatmeal Enthusiast in March.

I was so happy and excited that so many people liked my guest post!

And I think Lauren liked it to ;) She asked me to send her and all her readers the recipe for the lava baked oatmeal, so here you go :)

Apple Baked Oatmeal with Espresso Almond Butter Frosting

Remember how I bought almond butter and managed to not demolish it within seconds? Here is another recipe I created with it. Seriously, what could be better than a robe of almond butter smothering a baked oatmeal cake? Nothing, that’s what.

To see how I made it, scroll to the bottom. I’m about to do some sappy reflecting.

White Chocolate Macadamia Baked Oatmeal

McDonald's was the first fast food restaurant I "quit." I haven't been to one since the summer of 2010. The other similar chains followed shortly after: BK, Taco Bell, Wendy's, KFC, etc. One that stuck around for a while was Subway. In fact, I still have Subway a couple times a year in times of desperation.

Subway and I have an interesting history. I loathed it for my entire childhood. It smells so dreadful! Whenever my family would choose to go there for dinner, I would rant and grumble for days. I would order Cheetos and ice cream and refuse to order a sandwich. I eventually overcame that fussiness and started ordering the sandwiches, first having simple turkey and cheese sandwiches, and eventually experimenting with the veggies. Now, of course, my sandwiches are ALL veggies. I am always amused by the worker's faces when I ask for a sandwich with neither meat NOR cheese. "NO cheese? JUST veggies?" Yes. That's what I said.

Anyway, when I think of Subway, I also think of their cookies. I can't remember when I first tried it, but I always loved their white chocolate macadamia cookies. That combination is a killer.

I didn't think there was any way a baked oatmeal recipe could rival that cookie, but IT DID. It tasted EXACTLY like it. I'm continuously amazed at how easily I can recreate cookie recipes using baked oatmeal.

Salted Peanut Butter and Chocolate Chip Baked Oatmeal

Is it breakfast, or dessert?

Either.

I actually had to go several weeks (if not months?) without buying chocolate chips because I eat them by the handful(s). Because of my IBS, this causes many problems, so I had to quit them.

Wanting to make this recipe (and a few others), I caved and brought them back into my life.

Peanut Butter and Berry Baked Oatmeal

Saturday was silent on the blog. No new post, no Facebook update. I felt terribly guilty about it, but I was feeling horrific and just couldn't make it happen. I had to remind myself that nobody would die as a result of me not posting a new recipe. Forgive me if I'm wrong. ;)

I've been pushing myself to try more baked and overnight recipes. This recipe could be used to make a simple raspberry baked oatmeal, but since it was the weekend, I was dying for my traditional peanut butter breakfast. The result was a twist on the PB&J setup, but instead of jam, I just used fresh fruit! Delicious.

Brownie Baked Oatmeal Parfait

I feel like I picked the right time to go herbivore. It's so exciting to watch new vegan products pop up on mainstream grocery shelves all the time. It seems like every time I go to the store, I find a new vegan product. Now, I try not to fill my diet with mock meats and fake dairy, but it is amusing to experiment with them from time to time.

My local produce market, which understandably has a tiny dairy section, just added Almond Dream yogurt to its selection. They only carry two flavors--coconut and strawberry--but I am completely fine with that. The coconut flavor is one of my favorites anyway.

To celebrate, I made this parfait. I typically eat one of my banana/peanut butter recipes on weekends, so I actually had to FORCE myself to make this. I think I pouted the entire time until I was finally spooning the results into my mouth. Then the sacrifice seemed worth it.

Apple and Cherry Jam Baked Oatmeal

After several recommendations from multiple readers, I finally tried grating an apple instead of dicing it. I originally disregarded it because I thought about how much I loathe grating carrots. Luckily, apples are softer than carrots and grate much more easily. I actually found it easier--and possibly even faster--to grate the apple than dice it!

Because apple is so juicy, grating it results in a sauce-like (but wonderful) glop. That may sound unappealing, but it's perfect when you consider that you'll have apple flavor in every single bite. It also means you won't have big mushy apple chunks, which is my least favorite part of baked apple oatmeal.

Salted Brownie Baked Oatmeal: Revisited

Despite its popularity, I've never been particularly proud of the original Salted Brownie Baked Oatmeal. At the time, I was a bit precarious with my recipes. I knew it wasn't perfect (it tasted like bananas, for Pete's sake!), but I enjoyed it, and it sounded fancy, so I posted it before I should have. Much to my anxiety, this recipe became a hit. I wasn't surprised that people were excited about the recipe itself, but I was stunned when people actually tried it and liked it. Really? But it tastes like bananas!!

Peanut Butter Blossom Baked Oatmeal

Once upon a time, I liked cookies. Doesn't every child? I loved my mother's chocolate chip cookies (why was the rest of the world incapable of making decent chocolate chip cookies??), the white chocolate chip macadamia cookies from Subway, big puffy snickerdoodles, fork-pressed peanut butter cookies, frosted sugar cookies, aaaaaaaaaaaaaaaaaaand the incredible peanut butter blossom.

Now, I must rant that I've never understood why people are so incessant about this being a "holiday cookie." What the heck does a peanut butter cookie with a chocolate Kiss have to do with the holidays? Nothing.

Cranberry Baked Oatmeal

A couple weeks ago, I introduced my Cranberry Brownie Baked Oatmeal. Of course, that was delicious (CHOCOLATE); however, this time I wanted to try something more wholesome, and something that would let the cranberries have their moment.

The recipe calls for a half cup of cranberries, but I used even more. I measured with my hands and added one large handful and another smaller handful. I wanted the cranberries to stuff every bite of this oatmeal!

P.S. YES, that's real snow! Several inches pummeled us over the weekend. This was the first few minutes of the snowfall, before it became downright miserable. Doesn't it make a lovely picture?

Cranberry Baked Oatmeal

by The Oatmeal Artist
Prep Time: 5 min
Cook Time: 25 min
Ingredients (serves 1)
  • 1/2 cup rolled oats (I use Country Choice Organic)
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon
  • pinch of allspice (optional, could replace with nutmeg)
  • pinch of salt
  • 1/3 cup milk of choice
  • 1/4 tsp vanilla extract
  • 1 tsp maple syrup (I used only 1/2 a tsp)
  • 1/2 cup fresh cranberries (or more)
Instructions
  1. Preheat the oven to 350 F and spray a single-serving ramekin with non-stick spray.
  2. In a large bowl, add milk, vanilla extract, and maple syrup.
  3. In another bowl, combine dry ingredients: oats, cinnamon, baking powder, cinnamon, allspice, and salt. Once mixed, add to wet ingredients and stir until combined.
  4. Stir in fresh cranberries.
  5. Transfer to the ramekin and bake for 22-25 minutes.

Cranberry Brownie Baked Oatmeal

I need to go back to all my chocolate baked oatmeals and redo them. I need to fix them knowing what I know now. I must improve them...ASAP...because I now know the secret to a banana-less, applesauce-less baked oatmeal.

It's avocado. AVOCADO! Duh! Why didn't I think of that earlier? Avocado is used all the time as a replacement for butter and eggs in vegan baking. Ugh! I could have saved myself from so many unnecessary banana flavors.

This trick worked like a charm for this recipe. I was too lazy to drag out my food processor, so I just mashed the heck out of this avocado and mixed it by hand with the other ingredients. Before adding the oats and cranberries, I tasted the chocolate-avocado mixture...and it's like PUDDING. It reminded me of the dairy-free pudding I often make when I have avocado to use up...but without the banana!

Thanksgiving Stuffing Baked Oatmeal

You know I've never been much into holiday-themed recipes, but I've been alllllll about these Thanksgiving recipes lately: Pumpkin Pie, Apple & Chestnut, and all of those sweet potato recipes. I have more coming up next week, too! It's probably because Thanksgiving is my favorite holiday. Food, food, food...but no commercialism!

This obsession has grown recently due to the fact that I won't be able to enjoy much Thanksgiving food this year. As a vegetarian, I could still enjoy all my favorites: corn, squash, potatoes, stuffing, pumpkin pie, etc. Now, however, I have to accept that fact that all of these items are generally loaded in butter. Le sigh. As a result, I've turned to oatmeal to satisfy any Thanksgiving cravings (although I may actually make some herbie-friendly Thanksgiving foods on my own).

Strawberry Chocolate Chip Baked Oatmeal

Two baked recipes in one week!

This one is a little more decadent than Tuesday's Lemon Lover's recipe. As much as I love the occasional oatmeal with chocolate chips, I definitely have to be careful with how often I do it. I have quite a sensitive stomach, which is what led me to veganism in the first place, so eating chocolate chips in the morning can be a risk for me. Luckily, I had no issues, and even if I had, this oatmeal was so delicious that it wouldn't have mattered.

Lemon Lover's Baked Oatmeal

As I type this, my eyelids are drooping. I don't often talk about my work life on here, but times like this make it difficult to contemplate anything else. I spent the weekend redecorating my classroom, and on Saturday I was at school from 10 AM to 10 PM. ON THE WEEKEND, you guys! Today, I worked a similar length, but at least I was able to spend a portion of those hours working in my favorite coffee shop.

When I made this oatmeal on Sunday morning, I struggled to stay motivated. After working 12 hours a day, 8 days in a row, baking an oatmeal seems incredibly undesirable. However, this is what I scheduled to prepare over the weekend, and I had all the ingredients to do so. I knew the results would be worth it.

Peanut Butter and Grape Baked Oatmeal

Yeah, I finally made another baked oatmeal recipe. What can I say? The stove has my heart!

However, grapes in oatmeal fascinate me, and I've also been interested in what happens to grapes when they're baked. If you couldn't guess, this oatmeal is inspired by PB&J; the grapes take the place of grape jelly. (I grew up eating grape jelly, and it wasn't until last year that I finally accepted strawberry as another option. Still, grape is the best.)

Chocolate Zucchini Baked Oatmeal

It's been quite a long time since I've shared a recipe for baked oatmeal. I devoted most of July to stove-top recipes and had little ambition for heating up the oven.

I made an exception for this recipe. I came in possession of a zucchini from the farmers' market in my hometown before I left for New York, and I knew I had to attempt this recipe. I don't buy zucchinis often, so it was now or never.
