Grapefruit Blueberry Oatmeal

I've posted a lot of blueberry recipes lately, and I'm not apologizing for it!


But before I get into that...do you know what today is? It's September 1st. Today is the one-year anniversary of my first day of vegetarianism. As I explained in my "About Me" page, I originally just planned to try one month without meat. About halfway through the month of September, I already knew (at least subconsciously) that I would not be going back. I was in love with it.




That opinion hasn't changed. I've loved all twelve months of it, even Thanksgiving and Christmas and Easter, when everyone around me is practically celebrating turkey itself. On one hand, yes, those are difficult moments, but on the other hand, they remind me of my goals and purposes and keep me mindful. It can also be fun to maneuver the food line and assemble a decent meal from standard side dishes! It's a rewarding challenge. :)


But as for this grapefruit-blueberry combo, it's definitely a winner! Blueberries are fun to pair with strong-tasting fruits like grapefruit because they have a relatively neutral flavor, but they provide a nice sweetness to balance things out. And like I've said before, I just really, really, really love grapefruit in oatmeal!

Grapefruit Blueberry Oatmeal

Cook Time: 5 min
Ingredients (serves 1)
  • 1/2 a grapefruit
  • 1 cup milk of choice, or water
  • 1/2 cup rolled oats (I use Country Choice Organic)
  • 1/8 tsp ginger
  • 1/8 tsp cinnamon
  • pinch of salt
  • 1/4 cup fresh blueberries
Instructions
  1. Prep your grapefruit.
  2. Bring 1 cup liquid (I use an equal mixture of almond milk and water) to a boil, add 1/2 cup regular rolled oats, and reduce heat to medium. (If you'd like to add flax or chia seeds, do so now.)
  3. Spoon/cut the segments out and drop into the saucepan. Stir. Most of the segments should break apart and "become one" with the oatmeal.
  4. Once more of the liquid has dissolved, add ginger, cinnamon, and salt. Stir.
  5. If you'd like to add any extra ingredients (coconut oil, dried fruit, nuts, sunflower seeds), do so now.
  6. When you're pleased with the consistency of the oatmeal, add half the blueberries, stir gently, and then transfer to a bowl. Serve with another splash of your milk of choice, the remaining blueberries, and any other additional toppings (shredded coconut, nuts, etc.).

  1. I had the same situation but with veganism. Was veg for four years before I went all the way. Starting my ninth month now and I love it! Good luck with your forthcoming years!

    1. Thank you! And congrats on your veganism! As you might notice from my recipes, I'm mostly vegan. It's tough now because I have three roommates and we cook together, but I hope to be a full vegan someday!

  3. Never apologize for too many blueberries :) No such thing! Also an impossible thing? Too much oatmeal. I am totally with you in your 'oats craze' - if I may so call it that - I just can't get enough! I probably overindulge and defeat the purpose of using it as an uber-healthy breakfast, as I can often be found eating straight from the box! What's one to do while waiting for their oatmeal on the stove?

    Anyways, great blog! I just came across it today and am thrilled to find a blog whose recipes mirror all of my cravings! I, also, 'healthify' all of my baked goods and refuse to use sweetners and extra fats, and love that I now have a place to go to find unlimited inspiration!
