I made pancakes...
and they turned out pretty great.
Do you think that was an understatement? YES. IT WAS AN UNDERSTATEMENT. THIS WAS AMAZING.
I dreamed up this idea a month or two ago, but I truly slaved over exactly how the recipe would work. Would the pancakes be peanut butter or banana? Or both? Would the bacon go outside the pancakes, or in them? What kind of bacon would I use? Would I make homemade, or a prepared bacon from the store?? Would I drizzle with honey? Or peanut butter glaze? Or banana butter? Or would I use the banana sliced? OH MY GOODNESS.
And then I short-circuited and died. :)
Once I decided the direction I wanted to take this, I went right to work. Although this is more time-consuming than your average bowl of oats, it's fairly simple and comes together easily. I do love this pancake recipe and how I can just throw everything in my Ninja and blend it--so simple!

Elvis Oatcake Stack

Ingredients (serves 1)
- 2/3 cup regular rolled oats
- 1/2 cup milk of choice
- 1/2 overripe banana
- 1/2 tsp vanilla extract
- rounded 1/2 tsp baking powder
- dash of cinnamon
- pinch of salt
- 2 tbsp peanut butter
- 2 tsp milk of choice
- 1/2 overripe banana
- 1 serving of tempeh or veggie bacon, cut into "bits"
- honey for drizzling (can omit for strict vegans)
Instructions
- Begin by cooking the bacon according to directions.
- While the bacon is cooking, put peanut butter and 2 tsp of milk in a small bowl and stir/mash with a fork until combined. This creates a more spreadable, syrup-like peanut butter.
- Put all pancake ingredients in a blender and blend until smooth. Add extra liquid if necessary (just a tsp or so at a time). It should have the consistency of paint. :)
- Heat a griddle pan over medium low heat.
- When griddle pan is ready, spray with nonstick cooking spray (it only needs a little bit!), and use a large spoon or a small scoop to pour pancakes onto the griddle. I made small pancakes, so I used a large soup spoon, and it worked perfectly. Generally, don't go any bigger than 1/4 a cup.
- When bubbles have formed at the top of the pancake, flip over and cook for another minute. Repeat until all the batter has been used!
- To prepare the Elvis Oatcake Stack, layer one oatcake on a plate. Top with some bacon and peanut butter. Add another oatcake and repeat until all is used up. At the top, spread one more layer of peanut butter, slice the remainder of the banana, and sprinkle the last of the bacon bits.
- If using honey, drizzle over the entire stack before serving. You can also serve with crushed peanuts.

ReplyDeleteYou can search "nutrition information calculator" or something like that and find multiple websites. Enter in the ingredients you use and it will tell you all the info you need. (I don't count calories so I don't look up/post this info on my blog.)
DeleteI just made these for a hangover brunch and oh my goodness they are PERFECTION. They turned out so so well and were absolutely delicious! Never wanted the stack to end. Would it be wrong if I made them again for lunch and dinner today? The answer is no, no it wouldn't be. New favourite recipe!
