Salted Brownie Baked Oatmeal

Mmkay. How could anyone see the name of this recipe and NOT be tempted?!


I suppose I owe you that much. It's been over a WEEK since I've posted a recipe. First, I didn't have any of the right ingredients to make a new recipe. Then, I spent the weekend camping with my parents at my grandmother's farm. Then, I was so stressed out with work that I didn't have time to take pictures in the morning. Finally, yesterday I planned to make this recipe and blog it before work...only to wake up an hour late and have to settle for TOAST. :(


But hizzah! Oatmeal for dinner on a Friday night. Oh, and I have a few more recipes to try over the weekend!


The idea of this one has been haunting me for MONTHS. I knew I wanted to make it with applesauce (as opposed to banana), but I rarely buy applesauce. Thus, my fantasy about this baked bowl of perfection had to sit in the waiting room a little longer.


BUT ALAS...here it is! And oh yes, it was worth the wait!


Salted Brownie Baked Oatmeal

Prep Time: 5 min
Cook Time: 20 min
Ingredients (serves 1)
  • 1/3 cup milk of choice
  • 1/3 cup applesauce or 1/2 a ripe banana, mashed
  • 1/4 tsp vanilla extract
  • 1/2 cup regular rolled oats
  • 4 tsp. cocoa powder
  • 1/4 tsp. baking powder
  • one LARGE pinch of coarse salt (like kosher)
Instructions
  1. Preheat the oven to 350 F and spray a single-serving ramekin with non-stick spray.
  2. Mix together first three ingredients in a large bowl.
  3. Add in dry ingredients: oats, cocoa powder, and baking powder.
  4. Stir well, and then transfer to the ramekin.
  5. Top with salt, then bake for 18-25 minutes. Longer time will give you a more traditional brownie texture, but 18 minutes will give you a fudgy, doughy brownie. :)
  6. You could eat it plain, or top with various ingredients. Think of the type of stuff that normally goes in brownies, like walnuts or chocolate chips, or you could top with shredded coconut or sliced almonds! I stuck with plain because I really wanted to experience the salt. :)

* Alternatively, you could replace almond milk, applesauce/banana, and cocoa powder with 1/3 cup chocolate milk (I recommend Silk Dark Chocolate almond milk. If you wanted, you could still supplement with an extra teaspoon or so of cocoa powder.

    1. It was sweet enough for me! Unsweetened applesauce has a natural sweetness to it. However, I don't add sugar to any of my recipes, so it depends on your own preference. I'm used to low-sweetness.

  5. I made this with sweetened applesauce and sweetened dark chocolate chips, and it still wasnt sweet enough. I'd recommend either sweetened almond milk or some agave nectar or honey, if you are not opposed to honey. Other than that, it was great! 18 minutes is perfect.

  9. I just made this for breakfast today after having it pinned on Pinterest forever. I added extra cinnamon and a huge pinch of red chili powder to make it sort of like a Mexican mocha. It was soooo good--thanks for all the awesome recipes!

  12. I made this yesterday for "lunch" for me and the sis, and replaced the applesauce/banana with peanut butter ....OMG soooo good! I made it again for this morning (just reheated in the microwave) and added cinnamon and flaxseed meal. LOVE IT. You rock, Lauren!

  13. So I generally shy away from baked oatmeal and had this recipe tagged solely to modify into a protein muffin. However, this morning I decided to try it as is since I had some more time on my hands (with adding some protein powder into it for some more staying power) and it was soo yummy! 18 minutes was perfect. I think I may have to take a look at the rest of your baked oatmeal recipes instead of just sticking to the regular ones :)

  15. I made this tonight and it came out great! I doubled the recipe (so husband could have one too) and made a few alterations. I used a banana I had on hand and found it just short of 2/3 of a cup so I added a tsp or two of melted butter to make up the difference. I then added a tsp of sugar per serving in order to sweeten it up since it was a dessert rather than breakfast. I found 18 minutes produced a fudgy brownie as promised.

    Great recipe! I'd never been a fan of oatmeal, but it is highly advised for increasing milk production in nursing mothers. I'm always looking for new ways to eat oatmeal and I've pinned a few more of your recipes to add to my repertoire. Thanks so much for being an exciting, new resource!

    2. I could taste the banana, but it wasn't overwhelming. I'll definitely try it with apple sauce next time. Can you taste the apple at all?

      Again, I just want to say your blog is great. I'm loving all your recipes! Do you ever make granola or granola bars? I've been working with oatmeal desserts lately too. I think I'd really underestimated oatmeal.
