Lemon Drop Overnight Oatmeal

My goodness. Ever since I made that Lemon Coconut Oatmeal over spring break, I just CAN'T. STOP. I came back to the Jerz, went to Whole Foods, and somewhat begrudgingly (I'm cheap) passed over the ~$5 for a bottle of lemon extract. But now I can have wonderfully lemony oatmeal ALL THE TIME!

You could obviously top this with coconut and make it Overnight Lemon Coconut Oatmeal, but as is, this recipe is just a straight-up celebration of lemon. Don't skip the banana; I promise it's necessary! The yogurt will make it creamy but is not essential to the recipe.

This oatmeal is excellent cold, but as always, I warmed mine up. :)

Lemon Drop Overnight Oatmeal

Cook Time: Overnight
Ingredients (serves 1)
  • 1/2 cup rolled oats (I use Country Choice Organic)
  • 1/2 cup milk of choice
  • 1 banana, mashed thoroughly
  • juice of one lemon (~3 tbsp), or 1 tsp lemon extract
  • 1/4 cup nondairy yogurt (optional)
  • pinch of salt
  1. Combine all ingredients in a mason jar.
  2. Cover with lid and shake, shake, shake until combined.
  3. Store in the refrigerator overnight (or for several hours). Eat cold or warm up in the microwave! Topping ideas: lemon zest, candied lemon peel, shredded coconut, or dried pineapple (that's what you see in the picture! I also used raw chia seeds).

  1. Do you think I could skip the banana and replace it with 1/2 of plain yogurt and 1/4 cup of milk? I'm gonna try with lemon juice, I think 3 tps should do it! :D

    1. Ummm...well, the banana sweetens it. I'm afraid it would taste strange without anything sweetening it! Try it out, and let me know how it goes!

  2. Hi, this is my first time commenting so may I please say thank you so very much for this blog of yours and for sharing your knowledge on the greatest grain on earth - oats! I am a fellow oatmeal consumer and coveter so these are recipes that are highly appreciated and anticipated by myself :-)

    I have been sitting on an oatmeal-related dilemma for a while now before I have decided to attempt my first run of overnight oats (tonight, wish me luck!) mostly because of proportion confusion. Normally when I make my morning bowl o' oats I use 1 cup almond milk, 1/2 cup water to 1/2 cup 1-Minute Quick Quaker oats and simply increase the cook time to around 20-25 minutes. This is done in effort to achieve a more consistency more creamy and pillowy in nature as well as to increase portion size because I am extremely thin and petite. This being said, I was curious if I could still use my normal amount of liquids in my overnight oats? I have read recipe after recipe on several different blogs and the liquid amount ranges from around 1/2 - 1 cup as I have noticed. Could I make a successful bowl of overnight oats that have my desired "pillowiness" ? If not, what do I do?

      You have an intriguing method! I'm fairly certain this would not work for overnight oats because in my experience, adding more liquid merely results in "soupy" oats the next morning. It can only absorb a limited quantity. However, you may want to try this method: It seems to be what you're looking for.
