Tiger Stripes Oatmeal

Confession: it took me less than a week to polish off this jar of Dark Chocolate Dreams peanut butter. I have no regrets. I'm not ashamed.


I got to make all the recipes I was hoping to make, so that expensive jar served its purpose. It served its purpose well, in fact. For example, it really made this particular recipe a treat. Oranges in oatmeal tend to be somewhat lackluster on their own. I worried about this porridge being too "plain." If you look at the ingredients list, after all, the orange basically has to hold its own.

However, a little bit of Dark Chocolate Dreams was all it took to make this extraordinary.




The topping is really tricky, but it's worth it! You can also line the stripes with sliced or slivered almonds, which I tried later and really enjoyed.

Tiger Stripes Oatmeal

Ingredients (serves 1)
  • 1 orange (or 2 for a boost in flavor)
  • 3/4 cup milk of choice
  • 1/4 cup quick-cook steel-cut oats (I use Country Choice Organic)
  • pinch of salt
  • 2 tbsp chocolate nutty spread (I use Peanut Butter & Co. Dark Chocolate Dreams)
Instructions
  1. Prep your orange (or oranges).
  2. Bring milk (I use 1/2 c almond milk and 1/4 c water) to a boil, add oats, and reduce heat to medium. (If you'd like to add a teaspoon of flax or chia seeds, do so now.)
  3. Scoop out the segments from one half of your orange and add to the oatmeal (if you're using two oranges, add all the segments from the entire orange). Reserve the other segments for the topping.
  4. When you're pleased with the consistency of the oatmeal, transfer to a bowl. Carefully spread stripes of the chocolate nutty spread (this part is extremely difficult; take your time). Fill in the space between the stripes with the remaining orange segments.
