Strawberry Mojito Oatmeal

Who thought of combining lime with mint?


They deserve an award.

Also, who discovered oatmeal? They deserve a BILLION awards.




My ability to post new recipes has been severely limited for two reasons. 1) I'm super busy teaching and such. Like, super busy. Like, I spend every available second lesson planning. 2) I accidentally purchased strawberries and bananas this week, which forced me to resort to recipes I've already created! I will make sure to purchase some other fruit next time so I can create some new recipes.


I did, however, think of this gem. It was perfect, considering I've needed something to use my mint from the herb garden. It's been very desperate for attention lately!

Strawberry Mojito Oatmeal

Cook Time: 5 min
Ingredients (serves 1)
  • 1 cup milk of choice, or water
  • 1/2 cup rolled oats (I use Country Choice Organic)
  • 1/2 a ripe banana (or 2 chopped dates)
  • juice of 1 lime (~2 tbsp)
  • 3 sprigs of fresh mint (~10 leaves)
  • pinch of salt
  • 4-6 fresh strawberries, quartered
Instructions
  1. Bring milk (I use an equal mixture of coconut milk and water) to a boil, add oats, and reduce heat to medium. I also added a spoonful of chia seeds at the same time as my oats.
  2. Mash up a ripe banana and add to the oatmeal. Stir.
  3. While the oats are cooking, put the mint leaves in a bowl and add lime juice. "Smash" the leaves with a fork to release the flavor.
  4. Once more of the liquid in the oatmeal has absorbed, add lime juice and mint leaves, and a pinch of salt.
  5. When you're pleased with the consistency of the oatmeal, transfer to a bowl and top with strawberries, another mint leaf for garnish, and any other additional toppings you'd like (shredded coconut, nuts, etc.).
