Banana Chocolate Chip Oatcakes for One

The poll results are in! I must say, when I created the survey, I was nervous. I feared that nobody would respond, and it would remind me to be humble and that nobody actually reads my blog. Much to my delight, I got over 100 responses (the free service caps out at 100)!

So for you guys, I made these:

I am delighted to see that the demand lies in the areas that I already dedicate most of my time to! This tells me that I'm already giving you exactly what you want.

However, I also noticed there was a slight interest in pancakes and waffles, which is something I have not done a lot of. For all of you who wanted some pancake and waffle recipes, this one's for you! I don't even LIKE pancakes that much, but I gobbled these suckers UP!



These pancakes are great because they are essentially just oatmeal thinned out and poured onto a griddle! In other words, they do not come accompanied by a stomach ache and a sugar crash. They are best topped with fresh fruit, jam, or peanut butter. Or, you know, maple syrup, but I don't roll like that. I topped mine with a peanut butter glaze: a tablespoon of peanut butter + a tablespoon of almond milk, heated in the microwave for 20 seconds, and whisked together until smooth.

(Am I the only one that gets a gut ache from maple syrup? Please tell me I'm not the only one.)

Banana Chocolate Chip Oatcakes

Cook Time: 10 min
Ingredients (serves 1, ~10 silver dollar pa)
  • 2/3 cup regular rolled oats
  • 2/3 cup milk of choice
  • 1/2 overripe banana
  • 1/2 tsp vanilla extract
  • rounded 1/2 tsp baking powder
  • pinch of salt
  • handful of chocolate chips
Instructions
  1. Put all ingredients except chocolate chips in a blender and blend until smooth. Add extra liquid if necessary (just a tsp or so at a time). It should have the consistency of paint. :)
  2. Heat a griddle pan over medium low heat.
  3. While you wait for the pan to warm up, stir the chocolate chips into your pancake batter.
  4. When griddle pan is ready, spray with nonstick cooking spray (it only needs a little bit!), and use a large spoon or a small scoop to pour pancakes onto the griddle. I made small pancakes, so I used a large soup spoon, and it worked perfectly. Generally, don't go any bigger than 1/4 a cup, but I find that too big still.
  5. When bubbles have formed at the top of the pancake, flip over and cook for another minute. Repeat until all the batter has been used!

  1. Fab! I shared a similar pancake recipe with a friend yesterday, but that one used cottage cheese and she wanted a version that was non-dairy. This is perfect! I can't wait to try it myself since I prefer non-dairy as well... and I love oats!

  4. Great recipe! Will applesauce work in place of mashed banana? How many applesauce do you think I would need if I used that?

    1. Yes! Try about 1/4 a cup? It will drastically change the flavor of the pancakes, but give it a shot!

  9. THESE ARE AMAZING. Would it be acceptable to say 3000/10?? The consistency was perfect, smelt wonderful, it took me less than 15 seconds to blend them in my blender, and to top it all off they tasted incredible. YUM!!!

  10. Thank you for this recipe! My friend wanted a non-dairy version of the oats-and-cottage cheese version. I used your recipe as a base to make an apple-cinnamon version since I didn't want to use banana. They're tasty but they deflate after you take them off the heat, which doesn't matter to me but maybe an egg would help to keep things puffy. I love gobbling down the whole batch, but when I can't eat all of them, they definitely freeze and reheat well.

  11. Amazing recipe! Made these this morning with a full banana, omitted the chocolate, and made the peanut butter sauce. I then proceeded to smear half with the peanut butter and half with strawberry jam and stack them together. PB&J oatcakes are now my new favorite thing, I think.

  14. Mine came out a bit thin, so next time i'll try a full cup of oats. The only change I made was using almond extract instead of vanilla (I´m running low). Taste wonderful! I served them with lightly sweetened vanilla sour cream (DIY) since thats what I had in the fridge and it was a great combo! Also I found them too filling, which means tomorrow´s breakfast is ready. :P
