Autumn Muesli

I don't know what it is about muesli lately, but I am all about it. I think it's because I've been setting my electric blanket too high at night, and when I wake up in the morning, all I want is cold muesli.


This muesli essentially just celebrates autumn. Okay, so maybe pumpkin didn't make it in (don't worry, that's coming!), BUT there are pepitas, which are pumpkin seeds, so...I guess that counts! I also used dried apples, raisins, golden raisins, dried cranberries, and pecan pieces. DIVINE.

My first bites were certainly pleasant, but I felt that something was missing. It was almost too light and bright and sunshiny. It needed more autumn. I took a risk and added a dash of cinnamon, and wow, it made all the difference!


Side note: explaining to people how wonderful muesli is can be a pain. There is nothing appealing about the description "uncooked granola." Like, when you really think about it, muesli should be terrible. So why is it so great?!


And as you can see, I added pomegranates to mine because I'm addicted right now. I keep throwing my money away on those ridiculous convenience packages at Trader Joe's. I will happily pay an extra $1.50 to have somebody else prepare my pomegranate for me... :)

Autumn Muesli

Ingredients (serves 1)
  • 1/2 cup rolled or quick oats (I use Country Choice Organic)
  • 2 tbsp diced dried apple
  • 2 tbsp raisins, golden raisins, or cranberries, OR a mix of the three
  • 1 tbsp pepitas
  • 1 tbsp pecan pieces
  • pinch of cinnamon
  • 1/4 cup pomegranate seeds (optional)
Instructions
  1. Mix all ingredients (except pomegranate) until combined.
  2. Serve with yogurt or milk. Add pomegranates when serving.

    1. Certainly! I almost did that, too, but I've always wanted to try dried apples (FYI--they're kinda weird; I doubt I'll buy them again!).

  4. I love this! Also, it has come to my attention that i cant access your recipe page off of my iphone. I was wondering if there was anything that you could do to fix it? I love to look through and try all of your recipes but ive had a hard time becuase i cant see them all together :( if theres any way you could fix it that would be awesome! Thank you!

    1. I have the same problem with accessing the recipe page on my phone. And even when I'm on the computer, I still prefer the old recipe page. It may not have been as fancy but it was nice to be able to scroll through all the recipes on one page, especially since I usually don't know what I want, so I don't have anything to search for.

    2. I will keep this in mind, but unfortunately, I spent months (hours and hours and hours) putting this new page together, and the thought of re-assembling the old index is atrocious to me. I will probably do it eventually, but not anytime in the near future. I'm a little heartbroken that my new recipe index isn't more of a hit!

    2. Yep! It's best if you let it sit in milk or yogurt (or even juice) for five minutes or more (it soaks up the liquid and softens), but I've eaten it right away before.
