There are some recipes that take me forever to get right. Then, there are others that turn out exactly as I had imagined on the first try (like my Carrot Cake Oatmeal and Peanut Butter Cookie Baked Oatmeal).

Admittedly, I spent a while mentally concocting this one, but after I bought some pitted dates, it all came together. This is the first time I've used dates in a recipe (let alone oatmeal), and I must say, I'm impressed! Letting it soak with the oatmeal overnight softened it up and let the oatmeal absorb the sweetness. It was the perfect amount of sweetness, especially when I added a touch of maple syrup on top.
I still have to experiment with using dates in stove-top or baked oatmeal, but when I figure it out, you'll be the first to know! :)

French Toast Overnight Oatmeal

Ingredients (serves 1)
- 1/2 cup rolled oats (I use Country Choice Organic)
- 1/2 cup milk or choice
- 1 pitted date, chopped finely
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 1 tsp chia seeds
- 1/4 cup vanilla-flavored yogurt (I use Amande almond yogurt) (optional)
- pinch of salt
- maple syrup for topping
Instructions
- Combine all ingredients in a mason jar.
- If you'd like to add any extra ingredients (coconut oil, dried fruit, nuts, sunflower seeds), do so now.
- Cover, and shake vigorously until ingredients are combined.
- Let it sit in refrigerator overnight (or at least a few hours).
- In the morning, either heat up or eat cold (this one is best warmed up). Top with maple syrup (or your syrup/topping of preference, like this warm Maple-Nut Sauce!).

ReplyDeleteSure! Just use a teaspoon or two of maple syrup (or honey, if you're okay with that). You could also use a tablespoon of raisins because I've heard that has a similar effect, but I haven't tried it myself, so I'm not sure what it'd be like. :)

DeleteI tried this with the raisins instead of dates, and I slightly increased the milk since I like oatmeal soupier. Delicious! The raisins plumped up and the whole bowl was sweet enough without the maple syrup even!

DeleteJust prepared this for tomorrow's breakfast! I used unsweetened vanilla almond milk and 1/4 cup of So Delicious Coconut Greek Style Vanilla yogurt that I picked up today for the first time. Next on my list: buy a ramekin to make those decadent baked oatmeal recipes of yours! :)

I just love dates in stove-top oatmeal. Warm dates taste like heaven!!! You dont even have to use any sweetener :-) my favourite one is with banana and ricotta cheese and a little agave syrup on the top!!! Heaven! :)
