Oatmeal Recipes for Coconut Lovers!

Most people associate coconut with summer. It's tropical, and many pina colada lovers celebrate the hot summer months. I have no shame in admitting that I devour coconut year-round. It's recently become one of my favorite ingredients to work with, no matter the month.

In honor of my semi-recent transformation (from coconut hater to lover), here is a round-up of my favorite coconut recipes!



This recipe, made on a whim one Saturday morning, turned out
to be more than just a keeper. Creamy and fluffy from the bananas,
this baked oatmeal is both unique and nutritious.




This may not be one of my most popular recipes, but I'm
crazy about this one. I can never believe how delicious
this combination is. If you're looking for something out
of the ordinary, definitely give this one a shot.




I think I like the oatmeal version of this even better than the drink.

Mmm... Just like the Pina Colada Oatmeal, this porridge
combines the earthy taste of coconut with a splash of sweet,
fruity flavor. Fresh lemon juice or lemon extract give
a mega dose of citrus!




Three words: coconut-pecan butter.

  2. I'm a coconut-hater-turned-lover too! The turning point was when I tried coconut butter, and the rest is history. A drizzle of coconut milk or a sprinkling of shredded coconut does wonders to lift the flavours of any dish, oatmeal included :)
