Overnight Coconut Oatmeal

Want to enjoy the easiest, laziest oatmeal ever?


Take mason jar. Fill with coconut milk, oats, and chia seeds. Place in fridge. Sleep. Wake up. Eat.


Or, if you're feeling fancy, wake up, add chocolate chips, shredded coconut, fruit, and/or anything. Eat.

Coconut Overnight Oatmeal

Prep Time: 5 min
Cook Time: Overnight
Ingredients (serves 1)
  • 2/3 cup coconut milk
  • 1/2 cup rolled oats (I use Country Choice Organic)
  • 1 tbsp chia seeds
  • 2 tsp liquid sweetener of choice (optional)
  • pinch of salt
Instructions
  1. Combine all ingredients in a mason jar.
  2. Cover with lid and shake vigorously.
  3. Place in fridge for several hours or overnight.
  4. Eat from jar, or transfer to a bowl. Heat up, or leave cold (it's like pudding!).

  1. This looks great! I love overnight oats, and it makes breakfast so easy. I've never made it with coconut milk before, but I bet it's delicious. Did you use the canned coconut milk or the kind in the carton?

    1. Thanks! I would recommend the kind in the carton. I used the stuff from the can because it was super cheap from Trader Joe's. ;) However, I much prefer the carton kind. The canned version tastes like...aluminum cans. :)

  2. Hi, this question is unrelated to this post (which looks delicious!), but I'm just wondering how do you decide whether to stir in your add-ins or to just use them as toppings?

    1. Excellent question! Sometimes I'll take the same ingredient and use it as both an add-in AND a topping, just so that there is plenty of it in there. In general, toppings MOSTLY just appeal to the presentation of the oatmeal, and so if that's not a concern, you could just go ahead and mix it in. The only ingredient where this is not the case is chocolate chips. It's pointless to add-in chocolate chips while you're cooking because they'll immediately melt and lose their chip appeal! I always save choc. chips for the end.

    I'm really intrigued by all the oatmeal recipes and am so pleased that you use real ingredients and no added sugar. I need clarification on one ingredient: coconut milk. Are you using a coconut milk beverage like SoDelicious? Or are you using the coconut milk that comes in a can that is used for cooking Thai food? I'm assuming it's milk like the SoDelicious brand.

    Eager to try the overnight method!

    1. Hey Bea! Great question. I've used both, and the SoDelicious kind makes the best oatmeal, I think. The canned stuff works, but it leaves a bit of an aluminum taste. :)

    2. Thanks for the clarification, Lauren.

      I made Overnight Coconut Oatmeal using Trader Joe's version of coconut milk in a carton (like SoDelicious). I used all of the required ingredients (Bob's Red Mill rolled oats) and added nothing else. I followed instructions exactly including the shaking vigorously. I put it in the refrigerator around 8pm. When I got it out at 6am, the jar was solids on the bottom and liquid on the top (about 50/50). I was expecting all the liquid to be absorbed. Where did I go off track? :0) Tastes good, though!

    3. Aha. This was one of my first overnight recipes, before I really "figured out" overnight oats. The oats to liquid ration should actually be closer to 1:1. I'm not sure why I was so off when I posted this. Thanks for letting me know, and I hope you give it another chance!

  4. So I had this for breakfast this morning.. delicious! And guess what? It's my first attempt at overnight oats! I love baked oatmeal so much that I've been stubborn about trying overnight oatmeal, but I finally gave in, and while I'll still make yummy baked oatmeal cookie-like goodness, this is just too convenient not to make more often!

Keeping it simple ;) I actually chose this one for my birthday breakfast tomorrow, so just popped nye readymade jar in the fridge, ready for tomorrow!
