Berry-Ginger Sauce

To be honest, I'd be happy eating "boring" oatmeal forever. A simple peanut butter and banana oatmeal makes me absolutely giddy. However, because I own an oatmeal blog where people come to see new and creative ideas, I have to get fancy sometimes. For those of you who like getting fancy, this one's for you.


Toppings make things special. Just throwing chocolate chips on my oatmeal gets me all excited, so imagine how I felt drizzling on spoonfuls of BRIGHT RED DELICIOUSNESS.

I put mine over Spiced Banana Baked Oatmeal (spiced with cinnamon and nutmeg), an easy variation on Banana Baked Oatmeal. The combination was fabulous. However, it would also work beautifully on stove-top oatmeal like Banana, Nutty Nana Berry, Chocolate Strawberry, Overnight Coconut, etc.


P.S. Let me know if you'd like to see more sauces/toppings. I have ideas, but I won't bother posting them if nobody cares. :)

Berry-Ginger Sauce

Prep Time: 5 min
Cook Time: 10 min
Ingredients (serves 1-2)
  • 1/2 cup finely diced berries
  • 1/4 cup water
  • 1 tsp chia seeds
  • scant 1/8 tsp ground ginger
  • pinch of salt
Instructions
  1. Add all ingredients to a small saucepan and cook over medium low. Stir consistently and keep an eye on it. If it's burning or getting stuck to the pan, turn down the heat. It should be simmering, NOT boiling.
  2. Allow it to cook and reduce for approximately ten minutes.
  3. Remove from eat and allow to sit for a couple minutes. It should thicken up a little more.

  1. What a great idea to use chia seeds to thicken this sauce! I would love to see more sauce and topping ideas - anything to make breakfast more exciting!

  2. This looks so good! I bet it would be great on pancakes or waffles too. I love adding different things to make my oatmeal more exciting, so it would be great to see some more sauces and other topping ideas!

  3. Found your blog yesterday and i have already made two different kinds of oatmeal. I also have several more on my to try list. If your sauces are as much fun as your oatmeal recipes bring them on.

  5. I love how your sauces serve only one. I made it with blueberries and used it over Nutty Nanna Berry. It was delish!
